Goji Espresso Kale Salad
Kale is a tasty veggies that comes from the cabbage family, and it could very well be one of the heatlhiest foods around. It contains over 45 different flavonoids, including kaempferol and quercetin just to name two: kale has both antioxidant and anti-inflammatory benefits, making it a one-two punch when it comes to cancer prevention.
1 15-ounce bunch of kale, any variety
2 tablespoons Goji Espresso Superfood Sauce
1 tablespoon oil olive
1/2 cup toasted walnuts or chickpeas
Place the kale, Goji Espresso sauce, and olive oil in a large bowl. Toss well and cover. refrigerate at least 4 hours before serving, to allow the kale to soften.
