Blazin’ Blueberry Veggies Stir Fry
A steamy hot stir-fry is a delicious way to get an extra dose of vegetables into your diet. 1 cup short grain brown rice
2 tablespoon canola or grapeseed oil
1 red bell pepper, seeded, chopped
1 green bell pepper, seeded, chopped
2 cups broccoli florets (about 1/2 head)
2 cups shiitake mushrooms, stems discard, sliced
1 small red onion, peeled, chopped
2 garlic cloves, minced
1 1-inch piece ginger, peeled, minced
1 5-ounce can water chestnuts, drained and well rinsed
1/2 cup Blazin’ Blueberry Superfood Sauce
Place the rice in a small saucepan along with 2 cups of water. Bring to a boil then cover. Reduce the heat to a simmer and cook 20 to 25 minutes until all the water is absorbed and the rice is tender. Set aside.
Heat a large skillet over high heat. Add the oil along with the peppers, broccoli, mushrooms, red onion, garlic, and ginger. Cook the vegetables, stirring often until the veggies start to soften. Turn the heat to low and add the water chestnuts and the Blazin’ Blueberry Superfood Sauce. Stir well and serve immediately with rice.
